Need an easy dinner tonight? Check out these crockpot reuben sandwiches. The slow cooker corn beef reubens will be loved by all.
My husband and I love these crockpot Reuben sandwiches. They are so easy to make and they don't take a lot of ingredients.
I love to throw them together in the afternoon for those crazy nights when we don't have time to cook.
It's also great for parties. Just turn the slow cooker on low and serve with some rolls.
Slow Cooker Corn Beef Reuben
To make these crockpot Reubens you will need a few things.
Ingredients:
- 1 8 oz. package of cream cheese
- 1/2 bottle (about 8 oz.) of Thousand Island Dressing
- 3-4 packages of Corned Beef lunch meat (I use Carl Buddig)
- bread or buns (we love pretzel bread)
Start by cutting up corned beef (I use Carl Buddig) and add it to the crock pot.
Next, add the cream cheese and thousand island dressing on top of the corned beef in a crock pot.
Cook on high, stirring every 10 minutes or so. It is ready when it has thickened, about 30-45 minutes.

Serve on bread, pretzel bread is our favorite to have it on. You can add Sauerkraut and cheese or leave it just plain.
It only takes a few minutes to make, but leaves you feeling like you actually cooked dinner. Don't you love when that happens? 😉
Crockpot Reuben Sandwiches
- 1 8 oz. package of cream cheese
- 1/2 bottle (about 8 oz.) of thousand Island Dressing

Slice corned beef into small slices. Place cream cheese, thousand island dressing and corned beef in a crock pot. Cook on high for at least 30-45 minutes or until thickened, it can be on low for up to 8 hours. Serve on bread with sauerkraut or without. We love it on pretzel bread.
