Ingredients and Equipment Needed:
To make the mixer shredded chicken breasts you will need a few things.
- Mixer (either a stand mixer or hand mixer works!)
- Chicken Breasts (cooked)
- Paddle (for this to work well I recommend using a paddle attachment)
Cooking and Seasoning The Chicken
When making a big batch of shredded chicken I recommend just seasoning your chicken with a little bit of salt and pepper. By just doing a basic seasoning of the chicken I can use it for a variety of recipes.
There are a few different ways you can cook the chicken. Usually, I either pan-cook the chicken or boil it. You don't want an overly crispy outside for shredding so when pan-cooking keep the heat a little lower.
When your chicken is to temperature it is ready to be shredded.
Using A Stand Mixer Or Hand Mixer To Shred The Chicken
Step 1: While the chicken breasts are still warm use a tongs or fork to put them in the bowl of the mixer.
Step 2: Using the paddle mixer turn the mixer on a low speed. I use the 1-2 speed on my KitchenAid mixer.
Step 3: Let the mixer run for about 30 seconds and turn the mixer off. Use the tongs or fork to mix up the chicken a little bit.
Step 4: Turn back on the mixer for about 1 minute or until the chicken is shredded to the desired consistency.
The larger your batch the longer it will take. You may be better off to do 2 small batches if you want it the perfect consistency.
I am always amazed at how quickly and easily this happens. I was able to shred around 1.5 pounds of chicken breasts in under 1 minute.
You can easily make up a large batch of shredded chicken and freeze part of it. My 1.5 pounds of chicken breasts ended up filling a 32-ounce container once shredded. I will use some of it tonight for lasagna roll-ups and freeze the rest of it.
