Growing up, I loved it when my dad had off work. He would get up and ready way earlier than I ever would. By the time I was up and getting ready for school he would be down in the kitchen working. He always asked me what I wanted for breakfast and would have it ready when I was finished getting ready. I usually got a choice of chocolate chip waffles or egg in a cup. He never used anything from a mix, it was always homemade. I loved having a hot, fresh breakfast.
I guess I got spoiled, because I will only eat a hot breakfast as an adult. We don't usually even have cereal in our house. I love making sure my kiddo gets a hot breakfast every morning before school. Pancakes is one of his favorite breakfasts. I don't like using any kind of store-bought pancake mix, we like homemade pancakes. But, I do love having a pancake mix on hand to whip them up quickly. Having a homemade pancake mix may only save 5 minutes, but some mornings it's the only thing standing between me and my loss of sanity.
I love having a big container of the homemade pancake mix and then I can just add the wet ingredients. It only takes a few minutes to whip up a batch of nice, fluffy pancakes. It's perfect for those days you don't really feel like cooking breakfast. You can spend a few minutes making up the mix and save time each day.
Start by mixing the flour, sugar, salt and baking powder in a large bowl. Once it is well mixed, store in an airtight container. This will make 6 large batches of pancakes. When you are ready to use, just mix with the wet ingredients.
This homemade pancake mix is so much cheaper than buying store-bought and it will save you time.
Homemade Pancake Mix
6 cups flour
1 1/2 cups sugar
4 1/2 teaspoons baking powder
3 teaspoons salt
Combine ingredients and mix well. Store in an airtight container. When you are ready to use, mix 1 1/4 cup pancake mix with 1 cup milk, 1 egg, and 1 tablespoon melted butter. Enjoy!

How many and what size pancakes can 1 1/4 c pancake mix make? Trying to plan for my story hour class of kids 3-5 years.

Hi Linda, it's hard to say because it really depends on the size that you make your pancakes. I would guess it makes around 7-9 full-size pancakes. I hope that helps.

You might try adding cinnamon and nutmeg to the dry mix and then adding a teaspoon of vanilla extract to the liquids. It gives you a nice spicy variation that is especially good with apples or berry topping.

I haven't tried it for waffles before. Not really sure if it could work or not. When I do make waffles I use this recipe. We like it, but since it takes a couple of different bowls I usually just make my pancakes. I might have to play around to see if I can make an easier waffle recipe. I hope that helps.
