There is nothing like a hot cup of hot cocoa in winter. I love coming in from the snow and fixing a cup. I let the marshmallows soak until they are all melted and gooey. Once all the marshmallows are gone, then I drink the hot cocoa. When I found this recipe on Cooks Illustrated I couldn't wait to try. I changed it around a little, of course I can't make a recipe without changing it. I don't think I will ever buy a hot cocoa mix again.
Start with some dark chocolate that is chopped. I used Ghirardelli because it is awesome! I broke it up into smaller pieces and then put it in the food processor. I pulsed it for a few seconds until it was chopped up.
Then I added the rest of the ingredients to the food processor. Let the food processor run for about 30 seconds, stir and then run for another 30 seconds.
Once it is well mixed you can store in an airtight container. The hot cocoa mix can be stored for up to two months in the container.
When you are ready to use heat 1 cup of milk in a small saucepan over medium heat.
Once the milk starts to bubble add 1/4 cup of the hot cocoa mix. Continue to stir for about two to three minutes, until well mixed.
Pour into a mug and add some marshmallows. I love to add some Kahlua to my hot cocoa, just don't get it mixed up with the kids hot cocoa! It also makes a great Christmas present. You can tie some ribbon around it or add a small bottle of Kahlua.
You can store the hot cocoa mix in an airtight container for up to two months. Enjoy!
Homemade Hot Cocoa Mix
- 1 cup sugar
- 6 ounces dark chocolate
- 1 cup cocoa powder
- 1/2 cup nonfat dry milk powder
- 3/4 teaspoon kosher salt
- 5 teaspoons cornstarch
- 1 teaspoon vanilla extract
Place 6 ounces dark chocolate in a food processor and pulse until in fine pieces. Add the rest of the ingredients to food processor and blend for about 1 minute until everything is a powder. To make a cup, bring 1 cup of milk to a slow boil, then add 1/4 cup hot cocoa mix. Pour into a mug and enjoy!
