One of my favorite ways of saving time and money is coming up with ways to serve a cheap easy breakfast. It seems like we are always in such a hurry in the morning. It's hard not to be tempted to go through the drive-thru or buy overpriced pre-made frozen breakfasts.
I have found a way around this by freezing my own breakfast foods that I make. It is much cheaper to make my own burritos, pancakes, and waffles and freeze them myself than buy store bought. Plus, I can easily alter the recipes to be ones that I know my family will eat.
With my kiddo headed back to school, I have been making lots of frozen meals for a quick breakfast. Freezing waffles works well for us because although we love waffles, I would never actually take the time to make them on a school day. By freezing waffles, my son can grab waffles from the freezer and quickly reheat them in the microwave.
Making your own homemade frozen waffles is very simple. You can use all different recipes for them so if your family has a preferred waffle recipe start with that. You just want to avoid waffles with fruits in the batter that may freeze funny. I often make the waffle recipe below.
Once you have the batter made up you can start making your waffles. I like to use just the center part of the waffle iron to make mini-waffles. Just pour in the amount of batter you wish to use and cook until the waffles are done. Set aside the cooked waffles on a plate until all the batter is used.
When you have finished cooking the waffles you will need to freeze them. You need to start by flash freezing the waffles so they don't stick together. I like to break up the waffles into smaller pieces so my kiddo can just dip the waffles into syrup. Just lay your waffles or waffle pieces on a tray and place them in the freezer for about 1-2 hours or until completely frozen.
When the waffles are frozen you can remove them from the freezer and store in a freezer safe ziploc bag or tuperware. Make sure the storage container is marked with what is in it and the date you made them.
When you are ready to use the waffles just pull out the amount you want and microwave until warm. Top with your favorite toppings or serve with a side of syrup for dip.
The waffles should be good for at least 2-3 months. You can easily double or triple the batch to get enough waffles to last your family a long time. Freezing Waffles
2 Eggs
2 cups flour
1 tablespoon sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/2 cup vegetable oil
1 3/4 cup milk
Beat eggs in large bowl until mixed. Mix in flour, sugar, baking powder, salt, vanilla, vegetable oil and milk. Stir until well mixed. Just pour in the amount of batter you wish to use and cook until the waffles are done. Set aside the cooked waffles on a plate until all the batter is used.
Lay your waffles or waffle pieces on a tray and place them in the freezer for about 1-2 hours or until completely frozen. When the waffles are frozen you can remove them from the freezer and store in a freezer-safe Ziploc bag or Tupperware. Make sure the storage container is marked with what is in it and the date you made them.
When you are ready to use the waffles just pull out the amount you want and microwave until warm. I usually do a couple small pieces for around 30 seconds. Top with your favorite toppings or serve with a side of syrup for dip.
The waffles will last in the freezer for about 3 months.
