Going back to school is always a hard time for me. We get up at 4:50 for my kiddo's swim practice.
Since I don't feel like cooking breakfast at 4:50, I like having foods that we can heat in the microwave.
Frozen pancakes are a fantastic easy meal that my son loves. He loves to eat them with some sausage and a glass of milk.
You can also try these scrambled pancakes. They are so easy to make!

You can make your pancakes using your favorite recipe. I use the recipe below for my pancake mix. I like to make up mini pancakes so they are easy to dip in syrup.
Mini pancakes are a favorite of my kiddo and they are less messy to eat if you have little ones. They are easy to make using a squeeze bottle. You can grab one here for cheap on amazon.
When the pancakes are done, lay them on a tray and place them in the freezer. By freezing them first you keep them from sticking together.
Once they are completely frozen you can place them in a freezer-safe bag or container. I recommend labeling the bag with the date and item.
Whenever you need a quick breakfast just pull out a few and microwave them. I usually do around 8-10 minis for about 30 seconds. They are good for about 6 months after freezing.
I have found that I can save money by making my own pancakes, plus they aren't filled with all the weird ingredients that some frozen pancakes have in them. I love having a quick warm breakfast to feed my son. You can use any pancake recipe, but here is my very favorite recipe. They are so moist!
Freezing Pancakes
1 cup, sifted all-purpose flour
1 cup milk
¼ cup white sugar
2 tbsp. melted butter
2 tsp. cooking spray or vegetable oil
¾ tsp. baking powder
½ tsp. salt
1 beaten egg
Add all the dry ingredients such as flour, baking powder, sugar and salt to a mixing bowl. Then add in the egg, melted butter, and milk. Mix well. Heat a pan, a skillet or griddle and spray with margarine or vegetable oil.
Pour or squirt the mixture onto the griddle. Cook for 1 minute and flip it upside down and cook other side too until both sides are golden-brown.

I took care of my grandmother for 7 years. 2 times a month I would make bisquits, french toast, and pancakes and freeze them. Along with cooked bacon and sausage. Her sitter stayed with her when I was at work.
When I saw this it brought back alot of good memories. That was over 20 years ago I was doing it to stay on a budget and the knowing that my sitter would be feeding her good. Every morning I would get up at take out something for her for breakfast and put it in the microwave. The sitter would get there at 8 am. Even after her death the tradition followed because my son was used to getting his too. It taught him independence something so small.

Question, when microwaving them should we wrap them in a paper towel first? And how long do you using microwave them for?

So glad you like them. I don't usually use a paper towel, but I bet that would help keep them moist. We usually do about 30-45 seconds for about 8-10 of the small ones. Hope that helps.
