I have been seeing the scrambled pancakes all over the internet. It looked so easy I decided to use my favorite pancake recipe and give the scrambled pancakes a try.
Scrambled Pancake Recipe
The scrambled pancake recipe is so easy to make. Instead of spending 5-10 minutes making pancakes, you can make up these in about 1-2 minutes.
You will need a few things to make the pancakes:
- Cast Iron Pan
- Griddle (I love this electric griddle from Amazon)
- Pancake Batter
- Spatula
- Large Bowl
- Whisk
Start By Making The Pancake Recipe
In a bowl start by mixing the dry ingredients. Then you will add in the wet ingredients and use the whisk to make sure there are no lumps.
Dry Ingredients:
- 1 cup, sifted all-purpose flour
- ¼ cup white sugar
- ¾ tsp. baking powder
- ½ tsp. salt
Once you have added all the dry ingredients to your bowl give them a few quick whips with the whisk to mix up the salt and baking powder.
Next, add the wet ingredients to the bowl.
Wet Ingredients:
- 1 cup milk, I use almond milk
- 2 tbsp. melted butter
- 1 beaten egg
Use the whisk to mix in the wet ingredients fully. You shouldn't have any lumps. Once your batter is free from lumps you can move on to cooking the scrambled pancakes.
Cooking Scrambled Pancakes
To cook your pancakes you will want to start by heating up either your cast iron pan or griddle.
I used the griddle to make them. You will want your surface hot so the pancakes start cooking right away. I set my griddle to 350 degrees.
Depending on how seasoned your pan or griddle is you may want to spray it with a little non-stick spray.

Once your griddle is hot you can dump the entire bowl of batter on it.
Give it about 20-30 seconds and then start to scrape the griddle with your spatula just like you would for scrambled eggs.
Continue to move the batter around until it is more like a dough and resembles scrambled eggs.
This should take about 1-2 minutes.
Once you have a thick dough and no more liquid you can turn off the stove or griddle and remove your pancakes.
Serving Scrambled Pancakes
I like to move my pancakes to a plate and sprinkle them with powdered sugar.
We serve them with a little bit of maple syrup and just completely skip using butter. I have also served them with some apple butter and they are delicious that way too.
