Growing up there was a small family owned bakery by our elementary school. Sometimes after school or on weekends we would walk over and get sugar cookies & chocolate milk and play on the playground. Their sugar cookies were amazing. They were soft and sweet with the most delicious icing on top.
I was thrilled when my sister gave me this recipe a couple of years ago for sugar cookies. It had been years since I had anything even close to the cookies from the bakery years ago. This cookie is so soft and moist. The sugary icing on top just makes the cookies perfect. These cookies are great for cut out cookies at Christmas or any holiday. Kids will have a great time helping to cut out and decorate the sugar cookies.
To make, start by mixing margarine and powdered sugar until it is a cream. Then add the egg and vanilla. Combine flour, baking soda, and cream of tartar in a separate bowl. Add to the wet mixture. Once well-mixed remove and let sit in the fridge for 30-45 minutes. This will make the dough easier to work with.
Once the dough has chilled for 30-45 minutes, place on well-floured surface and roll out to about 1/4 of an inch. Then you can start to cut out your cookies. Since I was making these for a party I just made them round.
Place your cutouts on a cookie sheet and bake for 15 minutes at 250 degrees. Do not let them brown, if you do they will be crunchy. Remove them from the oven and let cool.
Once they are cool, mix together powdered sugar and milk in a small bowl. If you want to add food coloring now you can do so. I think it is easiest to apply the icing by putting it in a squeeze bottle and pipe the icing onto the cookie. I have these squeeze bottles from Amazon. You can now slowly pipe the icing onto the cookie. I start by making a line around the cookie.
Then fill in the cookie with more icing. The icing will slowly spread to cover the cookie. If you want to add a second layer in a different color allow to harden for at least 10 minutes first. Then add second layer. Enjoy!

Sugar Cookies
- 1 1/2 cup Powdered Sugar
- 1 cup Margarine
- 1 egg
- 1 tsp. Vanilla
- 2 1/2 cups flour
- 1 tsp. baking soda
- 1 tsp. cream of tartar
Icing
- 1 1/4 cup powdered sugar
- 3 tablespoons milk
Heat oven to 250 degrees. Cream powdered sugar and margarine together in a bowl. Add egg and vanilla to mixture. In a separate bowl mix flour, baking soda, and cream of tartar. Mix the dry ingredients into the wet. Once well mixed let sit up in the fridge for 30-45 minutes. Roll cookies out to about 1/4 of an inch. Cut out cookies and bake in oven for about 15 minutes. Once cool decorate with icing.

Is margarine the frugal choice ( compared to butter) or is there a ingredient composition that makes it the better choice?

I was told that using butter would change the consistency of the cookie so stick with margarine. Because it saves money and was recommended I haven't tried anything but margarine in the recipe.
