This time of year I feel like everyone has tomatoes they are trying to give away. There are only so many meals you can eat with tomatoes. If you are getting tired of tomatoes try this easy sun dried tomato recipe. It's so easy to make sun dried tomatoes that you can enjoy all year-long.
Sun dried tomatoes are very easy to make in either an oven or food dehydrator. It just takes a few minutes to get them ready and then let them dry. I love the flavor that comes from a sun dried tomato.
Start by washing the tomatoes. Once they are clean, slice them in small even slices. The thinner you slice them is the quicker they will dry. By having consistently sized slices you will insure that they all dry at the same time.
Place them in the dehydrator or on a pan in the oven. I set my food dehydrator to 145 degrees. If you are using an oven you can place them on parchment paper at 200 degrees.
Let them dry until they become brittle and will snap when you try to break them.
You can then remove them from the oven or food dehydrator and let them cool. Once they have cooled place them in freezer safe baggies and store them in the freezer.
If you would like to make sun dried tomatoes in olive oil you can place some of the tomatoes in a small jar and cover the tomatoes with olive oil. I like to add some ground basil for extra flavor. Store in the fridge.
The frozen sun dried tomatoes will last about one year in the freezer. If you add the olive oil it will last a couple of weeks in the fridge. My family loves the sun dried tomatoes on top of our pizza or with mozzarella cheese.
Making sun dried tomatoes doesn't take much time and it's so nice to be able to enjoy produce from the garden all year-long.
