During the hot days of summer I never want to cook. Usually we are busy at the pool or running around and then I realize it's 5 o'clock and we need something for dinner. That is where this simple low country boil comes in.
Low country boil is so easy to make and doesn't take much time. When it's finished you can even just dump it out on a table covered in newspaper. At the end of dinner, throw away the newspaper and you are all cleaned up. Plus, with sausage, shrimp, corn, and potatoes there are plenty of choices for picky eaters.
Start by bringing 6 quarts of water and 3 tablespoons of Old Bay seasoning to a boil. If you have a pot with a strainer I recommend using it. While the water is coming to a boil, wash and cut the potatoes into smaller pieces.
Cut the link of sausage into 4 inch pieces. Add the potatoes and the sausage to the boiling water.
Let the potatoes and the sausage cook for 20 minutes. While they are cooking, shuck and clean 4 ears of corn. I like to break the ears of corn in half.
After the 20 minutes add the corn and continue to cook for 10 minutes. Add shrimp and cook for an extra 3 minutes.
Once the shrimp are a pink color you can remove the strainer part of the pot. Give it a minute to drain and you can pour the food out onto a large plate or a newspaper. All you need is some butter and salt and you have a delicious easy dinner for those busy summer nights. It's also very easy to double the recipe for a large crowd.
Low Country Boil
4 potatoes
4 ears of corn
1 lb. of shrimp
1 link of sausage
3 Tablespoons of Old Bay
Fill a large pot with about 6 quarts of water. Add the Old Bay seasoning and bring to a boil. Add potatoes and sausage, cook for 20 minutes. Then add the corn and cook for an additional 10. Add the shrimp and cook for three minutes. Drain the pot and serve with butter and salt.
