They say that breakfast is the most important meal of the day. For me, it is one of the hardest to find a good meal. We are often rushed and in a hurry in the morning. No one in my family likes cereal, so breakfast is often a glass of milk and breakfast bars. Every once in a while I like to mix up what we have for breakfast.
That is where these freezer breakfast sandwiches come in. They are easy to make and freeze well. Just grab one in the morning and microwave it. They are quick, easy and taste better than the store-bought kind. Plus, they are way cheaper to make than the expensive store-bought breakfast sandwiches or the drive-thru!
To make these I bought a dozen eggs, 12 English muffins, cheddar cheese, and sausage. You will want to start by cooking the eggs. I recommend using a muffin tin to cook them in. Just heat your oven to 350 degrees and then crack one egg in each spot. Add a dash of salt and pepper to each and break the yolk. Cook them in the oven until the eggs are set, about 13-15 minutes.
While the eggs are in the oven slice the sausage and fried it up. I just pull all of the sausage from the tube and slice it into 12 pieces. Cook it in a frying pan for a few minutes on each side until the sausauge is done. Set the sausage aside on paper towels to absorb the grease when they are finished cooking.
Then it just takes a few minutes assembling the sandwiches. Put one of the eggs, sausage patties, and slice of cheese on an open English muffin.
After assembling them you will want to wrap them up well so they don't get freezer burn. I used plastic wrap to wrap them up and then stored them all together in a freezer safe ziploc. It keeps them all together so you don't have any lost breakfast sandwiches in the freezer and it gives you a double layer of protection against freezer burn.
When you are ready for a sandwich just pull it out of the freezer and remove the plastic wrap. Wrap the sandwich in a paper towel and microwave for about 1-2 minutes. Remove from the microwave and enjoy! The sandwiches should be good in the freezer for about 1-2 months.
